Who doesn't like a sweet treat once in a while? And if we can add healthy ingredients to it even better, right? So check this recipe out!
As a busy mom of three, I need to have some easy and healthy options to satisfy my kids sweet tooth. I learned to make this cake with a dear friend, Tata Pinho who, just like me, loves a sweet treat.
This cake comes super in handy and the best thing about it is that it's super easy to make. You only need a few ingredients and have only 3 dishes left to be washed. (the blender cup, the bowel and the cake pan, that is all!) Sounds too good to be true? So come with me and see for yourself!

In a blender, you will mix these ingredients:

4 eggs
1 cup of oil
2 large carrots
Then, you will add this mixture into a bowl with the following ingredients:

2 cups of sugar *
2 cups of white flour
1 table spoon of baking powder
* The original recipe calls for 1 and 1/2 cup of sugar but in Canada I found that sugar is less sweet than in Brasil. So had to adapt it to 2 cups.
And mix everything by hand with a spoon. Then you should have a batter similar to the one below:

Let it sit for fifteen minutes while you pre heat the oven to 195 Celsius. Pour the batter into a greased pan and bake it for about 40-50 minutes or until you can stick a fork and it comes clean.
Last but not least, it freezes super well. I usually triple the recipe and freeze individual portions for a quick, easy and delicious snack.
